A simple and delicious gluten-free recipe that's perfect for a large family:
Gluten-Free Chicken Alfredo Pasta Bake
Ingredients:
1 lb gluten-free pasta (I use this one)
2 lbs boneless, skinless chicken breasts, diced
2 tablespoons olive oil
3 cloves garlic, minced
1 onion, diced
2 cups broccoli florets
2 cups sliced mushrooms
2 cups gluten-free Alfredo sauce
1 cup grated Parmesan cheeseSalt and pepper to taste
Fresh parsley for garnish
Instructions:
Preheat your oven to 375°F (190°C). Grease a large baking dish and set aside. Cook the gluten-free pasta according to the package instructions until al dente. Drain and set aside. In a large skillet, heat the olive oil over medium heat. Add the diced chicken breasts and cook until they are no longer pink in the center, about 5-7 minutes. Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic and diced onion. Cook until the onion is soft and translucent, about 3-4 minutes. Add the broccoli florets and sliced mushrooms to the skillet. Cook until the vegetables are tender, about 5 minutes. Return the cooked chicken to the skillet. Add the cooked pasta and gluten-free Alfredo sauce. Stir until everything is well combined. Transfer the mixture to the prepared baking dish. Sprinkle the grated Parmesan cheese evenly over the top. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Garnish with fresh parsley before serving. Enjoy this comforting and gluten-free meal with your family!
How to make gluten-free Alfredo sauce from scratch:
Ingredients:
1/2 cup unsalted butter
4 cloves garlic, minced
2 cups heavy cream
1 1/2 cups grated Parmesan cheese
Salt and pepper to taste
Optional: pinch of nutmeg for flavor
Instructions:
In a saucepan, melt the butter over medium heat. Add the minced garlic to the melted butter and cook for 1-2 minutes, stirring frequently, until fragrant. Pour in the heavy cream, stirring continuously to combine with the butter and garlic. Bring the mixture to a simmer, then reduce the heat to low. Gradually whisk in the grated Parmesan cheese, stirring until the cheese is completely melted and the sauce is smooth. If desired, season the sauce with salt, pepper, and a pinch of nutmeg for added flavor. Adjust seasoning to taste. Continue to cook the sauce over low heat for an additional 2-3 minutes, stirring occasionally, until it thickens slightly. Once the sauce reaches your desired consistency, remove it from the heat.
